A technology currently making a buzz is induction cooking hobs. A drawback to electric hobs has been the speed - or lack of - at which they heat up, and their overall response time. When it came to cooking hobs, gas hobs were always preferable, as they provided the heat nearly instantly. If you view any professional kitchen, you will notice the chefs will be using gas and not electric hobs. Induction hobs are the first electric hobs which are capable of equaling or beating the cooking time of a gas hob. Not only are induction hobs quick, they are also more energy efficient than a gas hob. They also maintain the other advantage inherent in electric hobs, they are far easier to wipe down and clean than gas hobs. Induction hobs work through a process of creating a magnetic field: a drawback to this technology is that not all cooking pans are compatible and may not work on an induction hob.
